Fudgey Almond Butter Brownies (GF & VEGAN)

Craving something salty, sweet and (relatively) good for you? Say no more. These gluten free, dairy free / vegan FUDGEY brownies are your one stop shop. Try topping with a chocolate dairy free frosting or Peanut butter / almond butter drizzle … you won’t regret it!



WHAT YOU WILL NEED:


2/3 cup oat flour (PRO TIP: blend oats in a food processor if you don’t have oat flour)

2 tablespoons cacao (unsweetened)

1/2 tsp salt

3/4 cup coconut sugar

6 oz dairy free dark chocolate, chopped

1/2 cup coconut oil

1/2 cup almond butter (or peanut butter of your choice)

1 tsp vanilla extract

2 flax eggs (Or regular eggs to make non-vegan)

1/2 cup dairy free chocolate chips


INSTRUCTIONS:

1. Preheat oven to 350 degrees. Line 8 inch pan with wax or parchment paper.


2. Mix together first 4 ingredients in a bowl. Set aside.


3. In a separate bowl, heat the chopped chocolate and coconut oil in the microwave for 30 seconds. Take out. Stir. Repeat until smooth. Once incorporated, add your almond butter and stir again until smooth. NOTE: If you still have clumps of almond/PB butter- that is OK... it will make for a delicious AB chunk surprise in your baked brownies!


4. Combine water and 2 tblsp of flax eggs (per package instructions). Set aside. When ready, add to chocolate mixture (If making non-vegan, add eggs directly to your chocolate mixture!) Mix all ingredients well. Add in your vanilla extract and stir well.


5.Slowly add your flour mix to your chocolate, turning by hand. Once fully incorporated, add your chocolate chips.


6. Bake 12-15 minutes. Cool. Eat. Enjoy!
